Baking Frenzy: Apple- Date Muffins

If you’ve got a sweet tooth, then we’ve got the recipe for you! Apple and date muffins are both nutritious and satisfying. They are great to have with your morning coffee or tea, a snack after lunch, or even used as ingredients for your child’s lunchbox. The following recipe is enough to make 12-18 muffins. If your child has a thing against fruits in their food, then peel the apple before grating it, and puree the dates with hot water to turn it into paste. You can also skip the pecans if anyone in your family is allergic to nuts.


Ingredie‚Äčnts:

2 cups all-purpose flour (You can also use 2 cups of self raising flour and omit the 2 teaspoons of baking powder)
2 teaspoons baking powder
½ cup caster sugar
1/3 cup vegetable oil
1 1/3 cup low fat yoghurt
2 eggs
1 grated red apple 
1 teaspoon ground cinnamon
½ cup chopped pecans (you can also use walnuts or almonds instead)
½ cup chopped dates


Directions:

• Preheat your oven to 180°C. 
• Place 12 paper cases in your muffin/cupcake tray, or lightly grease 12 muffin cups. 
• Sift the flour into a large mixing bowl, add the cinnamon and caster sugar (and baking powder if you’re using all-purpose flour), and stir together.
• In a separate bowl, combine the vegetable oil, yoghurt and eggs and stir well, then pour onto the dry ingredients and mix until combined.
• Add the apple, pecans and dates, then spoon the mixture into the paper cases or muffin cups.
• Bake for around 20-25 minutes. Check whether your muffins are ready by inserting a toothpick into a muffin; if the toothpick comes out clean, the muffins are ready to be taken out.
